Recipe: Port wine Gel

6g TEXTURATM Tempo Ready

100g white or red port wine (19% alcohol)


  1. Heat the port wine up to 35-40°C in the microwave for about 30-35 seconds at 750 W.

  2. Add TEXTURATM Tempo Ready little by little into the port while stirring slowly for 2 minutes.

  3. Sieve the mixture to remove any excess bubbles.

  4. Pour the gel into silicone decorating mat at a height of 5mm.

  5. Keep it in the fridge for approximately 1 hour.

Plating suggestions

  1. Press out rounds of gingerbread.
  2. Press out rounds of foie gras.
  3. Take the port gel out of the silicone decorating mat and replace it on top.
  4. Garnish with herbs, edible flower and dried papaya.


  • The port gel can also be cut into cubes.

  • Liquid sugar can add sweetness to the port gel, balancing the flavors of other ingredients and enhancing the overall taste.

  • Use in liquid form from 30°C by heating it up in the microwave for 30-35 seconds at 750 W to work faster and with virtually no risk.
